HIH chef wins SIMDI Biriyani Challenge at FHAM

Culinary Challenge is the highlight and most vibrant event in FHAM annual exhibitions.

The Food & Hospitality Asia Maldives (FHAM) 2022 exhibition is an annual function that gathers the whole hospitality industry in Maldives under one roof. Held on 28 August and closed on the 30th, one of the most colourful events in the FHAM is the Biryani Cooking Challenge.

This year’s best Biryani award was given to Hulhule’ Island Hotel (HIH) Chef Manoj Kumar Dubey from among 25 participating renowned chefs from resorts across the country. This cooking competition promotes one of SIMDI’s products, their Dunar Basmati rice. 

The highlight of the second day into the FHAM exhibition, here are the winners of this year's Culinary Challenge and the prizes SIMDI offered them:

  • 1st Place: Chef Manoj Kumar Dubey, HIH, won an all-expenses paid trip to Dunar's factory in New Delhi, India.

  • 2nd Place: Chef M. Badhry, Ellaidhoo Maldives by Cinnamon, won USD 300.

  • 3rd Place: Chef Abdul Kalaam, Sun Island Resort, won USD 200.

Always a major participant in FHAM exhibitions, SIMDI, a local company specialising in both wholesaling and retailing food and beverage products, showcased a wide range of their products through two separate exhibition stalls. 

FHAM is organised by Dhivehi Expo Services; and backed by a large network of business professionals representing a diversified sector in Sri Lanka and the South Asian Region, along with extensive operations in Seychelles and Dubai. Visitors are usually hotel and resort owners, suppliers, procurement managers, F&B managers, chefs, bakery owners, business development managers, front office managers, hotel project consultants, and a host of other allied representatives.
